Chocolate Chip Banana Bread
Ingredients:
- 1 cup organic coconut palm sugar (I use Wholesome)
- 3 medium organic bananas, mashed
- 1/2 cup organic, unrefined coconut oil, melted (Nutiva is my favorite)
- 2 tsp vanilla
- 1/4 cup unsweetened organic almond milk (can use soy if you have allergies)
- 1 tsp apple cider vinegar
- 2 cups organic all-purpose flour
- 3/4 tsp baking soda
- 1/2 tsp salt
- 3/4 cup dairy free chocolate mini-chips (I use Enjoy Life)
Baking Directions:
- Heat oven to 350 degrees F and grease bottom only of 9 inch loaf pan (I use vegan butter like Earth balance).
- In large bowl, beat sugar, bananas, coconut oil and vanilla until smooth. Stir in almond milk and vinegar. Add flour, baking soda, and salt and stir until just moistened.
- Pour mixture into greased loaf pan and top evenly with chocolate chips.
- Bake at 350 degrees F for 40-45 minutes or until toothpick inserted comes out clean.
