Chocolate Chip Banana Bread

Ingredients:

  • 1 cup organic coconut palm sugar (I use Wholesome)
  • 3 medium organic bananas, mashed
  • 1/2 cup organic, unrefined coconut oil, melted (Nutiva is my favorite)
  • 2 tsp vanilla
  • 1/4 cup unsweetened organic almond milk (can use soy if you have allergies)
  • 1 tsp apple cider vinegar
  • 2 cups organic all-purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup dairy free chocolate mini-chips (I use Enjoy Life)


Baking Directions:

  1. Heat oven to 350 degrees F and grease bottom only of 9 inch loaf pan (I use vegan butter like Earth balance).
  2. In large bowl, beat sugar, bananas, coconut oil and vanilla until smooth.  Stir in almond milk and vinegar.  Add flour, baking soda, and salt and stir until just moistened.  
  3. Pour mixture into greased loaf pan and top evenly with chocolate chips.
  4. Bake at 350 degrees F for 40-45 minutes or until toothpick inserted comes out clean.
